Bori(Barley) Shrimp: Among the shrimp, they are used as food ingredients because they are large in size and good taste. The Bori shrimp is also called ‘Odo-ri’ by another name. It is a High-quality shrimp, so expensive.

For your information, the origin of the barley shrimp is derived from its color, and if you look closely at the tail and legs of the barley shrimp, you will see yellowish colors. This color is like the ripe barley, so it is called the barley shrimp.

Incheon Garden’s main menu is Shrimp Soup, Megitang(Catfish Soup) and Songsaritang(Ricefish Soup). The most popular food is freshwater shrimps. The more shrimps chew, the more flavor you get, and the more radish they serve, the better it tastes.

Bori shrimp(Barley shrimp) on the Incheon River is lacking in quantity, so they brought only fresh natural products from all over the country. This is a rare food that can be tasted only by selected gourmets.

It is also popular to make its own side dishes such as salted yellow corvina and tohajeot(Salt-fermented toha shrimp).

In particular, Gochang’s unique dish of eating, “Zipjang” is a side dish that was eaten instead of gochujang(Red pepper sauce) when food was scarce before the fall harvest, a unique experience that can only be tasted in Incheon Garden.

Put chili powder, fermented soybean powder, honey, radish, red pepper leaf, red pepper, and chestnuts in glutinous rice paste and soak them once or twice a month to serve as a guest.
